Stuffed Rocoto Peppers – For a Whole New Peruvian Cuisine Experience

Bell peppers are usually just a component or a supporting ingredient in most dishes. There’s always a preconceived notion that they are hot and spicy, since they belong to the pepper family which is notorious in making a common man such a “hydrophilic” species. For those who already had a not so pleasant memory after tasting a piece or two of chili peppers, I believe they’ve developed a phobia already.  In Peru, you’ll be able to find what seems to be a sweet bell pepper but in fact, a very spicy species of pepper. Rocoto, one of the very hot chilis in Peru, is highlighted in a dish called Rocoto Relleno or stuffed red peppers. As the name implies, the filling of this typical Peruvian dish may vary from beef, pork, fish to chicken depending on your preference. The added spices plus the creamy cheese makes it perfect. If you want to make it even more spicy, you can add some more rocoto peppers to the filling.
